Hot Summer Days Are No Match for This Cooler
Hot days can leave you feeling like you’ll never cool off. Your energy drains away in the heat. I’ve found the quickest way to cope with the heat is to consume something cool, so that your temperature goes down from the inside out. Here’s the recipe for a delicious frosty drink – and, of course, it also uses healthy ingredients and is quick and simple to prepare.
Ingredients
Here’s all you need:
1/2 cup of carrot juice
1/2 cup of unsweetened coconut water
1 medium frozen banana (cut the banana into chunks before you freeze it)
1/2 cup frozen mango chunks (4 to 5 chunks, usually)
2 ice cubes
1 tablespoon nuts (optional) – almonds or walnuts work well
Put all the ingredients into a blender, and blend until smooth. It’s that easy!
Want To Make It Thicker?
The recipe above makes a true frosty drink which you can sip or gulp down. If you
prefer a thicker drink, or even a texture that matches soft-serve, you can easily accomplish this. Simply cut back on the amount of liquid in the recipe, reducing the carrot juice and coconut water in equal proportions and/or increase the amount of frozen fruit.
Experiment to see what you like. If you do get the consistency as thick as soft-serve, try eating your “drink” with a spoon, topping it with berries or sliced fruit.
This drink is slightly sweet because the fruit, carrot juice, and coconut water all have some natural sweetness. If you want the drink sweeter yet, try adding a small amount of date sugar or a whole pitted date to the ingredient list (soak the date first if you have time for smoother blending).
